Chef Wong – Cebiche – Lima, Peru

Chef Wong has a 7-table restaurant in Lima, Peru. It’s reservation only, and pretty darn expensive. But the man is a wiz with a knife and a fish. This video shows him making a ceviche all the way from fish and pulpo to plate. Almost worth the trip to Peru all by itself.

Top Attractions: Huaca Pucllana, a fascinating ancient ruin located in the heart of the Miraflores District of Lima. The adobe structure surrounded by high-rise apartment buildings provides an interesting contrast between the city’s past and present.

Iglesia de San Francisco, located in Lima’s Plaza de Armas, is beautiful church built atop catacombs. Tours of the church take you through the building and down into the catacombs, where you can see the massive piles of bones and other fascinating attractions stored below.

The Malecon is a beautiful walkway located in Miraflores overlooking the Pacific Ocean. While taking a stroll down the path you will notice many active locals and visitors enjoy the sunshine, as well as Lover’s Park with its suggestive statue of an intertwined coupled, and the modern Larcomar Mall, full of decent restaurants with spectacular ocean views.

Souvenir to Buy: Alpaca sweater. This warm fuzzy item will keep you warm back at home, or while traveling through the Andes as it does get chilly. You’ll also find that the prices (and often the quality) is much better in Peru than aborad.

Food to Try: Ceviche. It is hard to pick only one dish as Lima is the gastronomical capital of South America, and has an unbelievable selection of delicious foods. But ceviche is definitely one of the tastiest options, as well as the national dish. Ordered as a main course or a starter, ceviche consists of raw fish marinated in lime juice. The most common types of fish used include corvina (sea bass), lenguado (sole), trucha (trout), and bonito (sea fish similar to tuna).

Drink to Try: Pisco Sour. Peru’s national drink is an intoxicating point of pride for Peruvians. Pisco, a clear grape brandy, is the main ingredient of this cocktail. The brandy dates back to the 1520s, but pisco sour was first concocted in Lima in 1920 by an American expatriate. The basic recipe requires pisco, an egg white, simple syrup or sugar, lime or lemon juice, and Angostura bitters.

Book to Read: The War of the End of the World (La guerra del fin del mundo) by Mario Vargas Llosa. The Peruvian native has authored many novels, and was the winter of the 2010 Nobel Prize in Literature. Llosa has written widely acclaimed poetry, essays, and fiction, much of which features social commentary about Peru. You can take a cultural tour of Lima’s bohemian neighborhood of Barranco, where Mario Vargas Llosa owns a home.

Fun Fact: The potato originated in Peru, and there are over 3,000 varieties. The tomato and avocado also originated in Peru.

Peruvian cuisine is considered one of the most varied and tasty in the world. Thanks to the Pre-Inca and Inca heritage and the Spanish, African, Chinese Cantonese, Japanese and Italian migration, which happened mainly until the XIX century, it brings together a mixture of creole gastronomy and exquisite flavours from the four continents. Peruvian cuisine offers a unique variety of impressive typical dishes in constant evolution, impossible to number them all.

You will have the opportunity of getting a close approach to Peruvian cuisine when visiting the country.

You can choose from different and varied options, such as going to the market accompanied by a Chef who will show you the great variety of colored and aromatic fresh products and will reveal the secrets to choose the freshest and the best. Afterwards, you will go to the restaurant and will be able to watch the preparation or get involved in the cooking, drinking a Pisco Sour, our famous national cocktail. All this will take place in some of the best restaurants in Lima. These restaurants are managed by Peruvian Chefs with worldwide experience and who are famous for their excellent cuisine and imagination in creating the most superb dishes.

Peru boasts one of the finest cuisines in Latin America. Recipes such as ceviche (raw fish marinated in lemon juice), pachamanca (meat and vegetables cooked underground), chupe de camarones (shrimp soup), ají de gallina (spicy chicken) and juane (corn mash pastries) are just a few of the mouth-watering dishes served up in Peru. The quality and variety of dishes in Peru are due to several reasons.

First, Peru‘s ecological and climactic diversity (Peru is home to 84 of the 104 eco-systems existing on Earth) has given rise to a major supply of fresh produce, which any chef would be ecstatic about. The rich Peruvian fishing grounds abound in fish and shellfish species, the heart of the succulent coastal gastronomy. Rice, fowl and goat are the key ingredients of Peru’s north coastal cooking. In the Andes delicious ingredients such as the potato and sweet corn in all its varieties, plus cuy (guinea pig) and ají chili pepper are the basis of highland cooking and are to be found across the country. The jungle adds its own touch, wild game with a side serving of fried banana and manioc root. Local fruit varieties such as chirimoya (custard apple) and lucuma make incomparable deserts.

The second reason Peru has such wonderful food is the rich mix of Western and Eastern cultural traditions. Over the course of centuries, Peru has felt the influence of Spain in stews and soups, Arab sweets and desserts, African contributions to Creole cooking, Italian pastas, Japanese preparations of fish and shellfish and Chinese culinary methods which have given birth to one of the most popular gastronomic traditions in Peru: chifa. But the originality of Peru’s cuisine does not stem just from its traditional cooking -rather, it continues to incorporate new influences, preparing exquisite and impeccable dishes that have been dubbed the New Peruvian Cuisine. It is a veritable privilege to experience Peru’s cooking.

Lima, Peru offers unparalleled cuisine, beautiful warm weather, historic sights and friendly people that make for a comfortable and pleasant trip. However, the true measure of a visit is to further bolster our opinion of the exciting investment climate in Peru.  In particular, my charge was to take a critical East Coast eye to these pleasant climates to verify safety of principal, as well as political and economic stability.

Returns in the Peruvian commercial real estate sector are growing for some time now, but as we grow some of our larger investors needed clarification. To that end, company principals met with numerous officials from the Peruvian government, attorneys, developers and analysts. In particular, we interviewed Mr. Daniel Kerner, an analyst from the Eurasia Group, a New York based, global political risk research and consulting firm.

Mr. Kerner was very forthright when he described Peru as “one of the best managed economies in Latin America”.  This has been proven by steady growth since 1999 and a growing budgetary surplus of over billion US dollars. In addition, foreign investment continues to increase on a year to year basis, escalating to over billion USD in 2007. Because of these and other factors, Mr. Kerner believes Peru is well positioned to manage the global economic crisis.

A combination of one of the most stable currency exchange rates in the region as well as low and steady inflation pressure for over a decade has helped bolster the Peruvian currency. In 2008, Peru achieved investment grade status from Fitch ratings, Standard and Poors and Dominion Bond Rating Service. Peruvian debt is presently rated BBB- by S&P.  This allows Peru to support one of the lowest risks to investment in all of Latin America.

The political climate, notoriously volatile in South America, has been particularly tranquil in Peru.  Analysts feel that the next several years will continue with a stable peaceful government committed to growth and international investment.  Mr. Kerner stressed that Peruvian demand for populism is low and that the economy is on a firm pathway to an extremely market stable environment.

Peru represents an exciting combination of political, economic stability that translates in any language to one of the best investment opportunities in commercial real estate in the world today.

The letter of intent is presented to a seller in the preliminary stages of a commercial investment project. The intentions of a buyer or buyers representative, often the managing partner, are spelled out clearly and simply so the seller knows exactly how the buyer (or syndication) wants to purchase the property, and

5 Hotspots in Lima, Peru

Looking for something beyond the usual sun and surf? How about a place steeped in historical context, with mysterious jungles ruins and a once-glorious empire? Nowhere else can you find it than Lima, Peru. Located in the country’s Pacific coast, this city never fails to enchant travelers with its rich link to the past.

Considered as one of the biggest desert towns in the world, Lima offers a prosperous culture, inspired and influenced by Spanish and ancient Inca culture. The city never stops to surprise travelers yearly, from high-end car racing at night to splendid views of the Pacific seas that gives an exceptional experience to every vacationers.
But hold your horses! Before traveling to any holiday location, it’s advisable to research further on what can be done at the site. So before booking your travel tickets and reserving your hotel accommodations, let me give a glimpse of the five most exciting places you can visit while in Lima, Peru.
The Plaza de Armas: Also known as the Plaza Mayor, the plaza is a historical landmark that was created by the Spaniards during their days in Peru. The popular city square is surrounded by the significant locations in Lima, such as church, schools, business and government buildings. The place is also the central square of downtown Lima.

The La Iglesia de San Francisco: The popular tourist’s stopover is known for the cold underground catacombs that features 25,000 human skeletons crafted since 16th century. An enigmatic, ancient library was also found beneath the prominent edifice that houses oversized books and spiral staircases.

Huaca Pucllana: Created out of small hand-crafted sun-dried bricks, the Huaca Pucllna in Miraflores is a 22-meters high construction that was made in 200-700 A.D. The site is equally divided in two areas for two important events: the ceremonial and the administrative. For only five soles (.77) admission fee for each adult, you can take a tour around the museums , take pictures of the bountiful native flora and fauna at the small park, and visit the craftsmen’s residence where handmade crafts are placed on sale and display. And for those who can afford, an eponymous high-end restaurant serve authentic cuisines from renowned Peruvian chefs while diners enjoy the gorgeous views of the site, especially the romantic night lights.

The Museo Larco Herrera: The iconic museum exhibits the country’s prehistoric preserved gold and jewelries, and even erotic potteries that were discovered from the glorious Inca Era. Built during the 18th century, the museum is bounded by bountiful, breathtaking gardens and boasts an excellent panorama of the pre-Columbian landscapes and architecture in Lima.

The Pachacamac: This enormous archeological site in Lima used to be the major spiritual place in South America. Pre-Inca and Inca era temples are all-over the place. Unfortunately, people are failing to protect and maintain the place so it’s better if you pay a visit to the historic site right now before it completely becomes a thing of the history.

These are just five of the most amazing places you can check out when you plan to visit the magnificent capital city of Peru. The best thing about traveling in Lima is the out-of-this-world experience and amazing stories you can brag to your friends when you get back to your homeland.
